Num banh hoi sach chrouk.
(Rice thread noodle with pork.)
Khmer Krom usually serves rice thread noodle with pork meat on special occasions. Back home, on Memorial Day my dad would roast a whole little pig for food offering to our ancestors. After traditional ceremony we would eat roasted pig with *num banh hoi.*
*Num banh hoi* is thin strip of rice thread noodle that bundled in. Our people love to wraps noodle with meat; fish or shrimp and mix herbs, and dips in our favorite sauce.
There was a Khmer Krom tale about a young bride who was learning how to make noodle. But it didn’t turn out like normal noodle. When the mother in-laws asked her “ num pachok min douch num pachok, huey num xa ey ke nis?"
Meaning * is noodle but is not look like noodle what it is? Before the young bride can answer, her husband shouted,” num cham hoi heuy nov oun? “ Meaning * Is the steam cake done,honey?” The young bridge replied,” Num cham hoi huey,huey bong” Meaning“ steam cake is done, honey.” Most Vietnamese people don't know how to pronounces in Khmer so they call Banh' h?oi and that was how the name of 'num banh hoi' came from. :)
- Ingredients :
- 1 lb Roasted pork meat,(sold at Asian markets or barbecue places), cut into bite sizes
- Or 1 ˝ lb boiled lean pork meat or pork belly, slice thin
- 2 Tablespoons vegetable oil
- 2 Stalks green onion, chopped
- 1 lb package prepared banh hoi noodle( sold at most Asian markets)
- Or 1 Package Num Banh hoi noodle, steamed to tender
- 2 Cucumber, peeled and slices thin
- 1 Bunch of lettuce, separates each leaf, rinsed and drained
- ˝ lb of mix fresh herbs( mint, cilantro, sweet basil), rinsed and drained
- Procedures :
To boil meat: Put pork meat in a large pot, pour water to cover meat and cook till meat tender. Remove cooked meat and slice thinly when meat cool off,set a side.
Heat oil in a small saucepan. When oil is hot add green onion, stirs and remove onion oil from the stove. Set a side.
To cook num banh hoi:
A : Cook 6 cups water in a large pot. When water bubbling add noodle to boiling water and cook till noodle tender. Pour noodle in to a colander, rinses under cold water. Put cooked noodle in a large container with cold water. Then using your fingers to picks some noodle up and spreads it out to strip of noodle about 6 inches length. Squeeze water out from the sheet noodle gently with your hand, and lay noodle flat on a colander to drain excessive water. Continue till done.
B : Or you can steam num banh hoi right out of the package, take each layer of num banh hoi and places it on top of the steamer. Steamed till noodle tender and set a side to cool off.
Note: Skip the above steps if your store offers already cooked num banh hoi, continue to next step.
Arranges noodle on a large plate, spreads some onion oil on top. Continue layering noodle and spreading onion oil on top till done.
To serve:
In a large platter, put some lettuces, mix herbs and cucumber at one corner. Put noodles next to vegetables and meat.
To eat:
Wraps a sheet of noodle with vegetables and meat, dips with
sweet fish sauce
Enjoy.
