Kho thaithao tohu.
( Braised daikon and tofu).
My maternal grandfather was vegetarian who inspired me to learn vegetarian cooking because he said when I was a little girl; I used to complain whenever we ate vegetarian food. :) At my house, four times a month, on the 30th, the 1st, the 14th and 15th every one eat only vegetarian food. Vegetarian food have come long way, many Khmer Krom vegetarian recipes are absolutely delicious. This braised daikon with tofu and carrot is very yummy with rice.
- Ingredients :
- 2 Tablespoons vegetable oil
- 4 Pieces extra-firmed tofu
- 1 daikon approx 2lbs, peeled and cut chunks
- 1 Carrot, peeled and cut chunks
- 2 Tablespoons mushroom sauce
- 1 Tablespoon soy sauce
- 2 Cups water
- ¼ Teaspoon black pepper
- ¼ Cup chopped fresh cilantro
- Procedures :
Pre heat a skillet or wok. When it hot add oil and pan fry tofu till both sides golden brown. Put fried tofu in a plate covered with towel to drain off excessive oil and cut tofu in to chunks bite sizes.
In a large pot, put daikon with carrot, fried tofu, mushroom sauce, and soy sauce and water in the pot. Covered pot with lid and simmering till daikon tender.
Sprinkles with black pepper and top with cilantro before serve.
Serve hot with rice.
