(Crispy fried fish with star fruit sauce.)
Ancient Star fruit originated from India. Star fruit have been in Cambodia many thousands years, long before the Khmer Kingdom Funan was Indianized at the first century AD. Star fruit also known as carambola fruit is one of the prettiest, exotic and miracle fruits in Kampuchea Krom. Ripe star fruit is sweet and juicy, green star fruit is juicy and a little tart. Star fruit is excellent for dessert, cooking and medicine for treatments many illness and diseases. Star fruit juice use for treats dehydrated, fever, hangover, urinary tract, liver, gastro-intestinal tract and also use as bleach for rust stain on clothes. Moisten, crushed star fruit leaves spreads on break out skin like rash, chicken pot or eczema to smooth the skin and prevent further infection. Pretty and fragrant star fruit flowers are edible, eaten star fruit's flowers help increase poor appetite. Many people picks little star fruit flowers to rubs on skin to relieve contact dermatitis. Star fruit have very few seeds, but seed’s powder is uses for relaxes asthma attack, for colic and cough. Sliced ripe star fruit is known to help control itching and bleeding hemorrhoids.
Khmer Krom crispy fried fish with star fruit sauce taste heavenly delicious. For this recipe you can use any kind of white meat fish that you prefer, just make sure that fish is fresh.
- Ingredients :
- ½ Cup water
- 1 Teaspoon corn starch
- 1 Tablespoon sugar
- 1 Tablespoon fish sauce
- 1 Tablespoon soy sauce
- 1 Teaspoon oyster sauce
- 4 Tablespoons vegetable oil
- 1 Medium fish, 1 to ½ lb, cleaned , removed guts but keeps head and tail on
- 1 Large clove garlic, minced
- 1 Cup chopped yellow onion
- ½ Cup julienne carrot
- 1 Large tomato, diced
- ½ Cup diced red pepper
- 1 Star fruit, trims off tips from each wedge, sliced and removed seeds
- ¼ Teaspoon black pepper
- 2 Stalks green onion, chopped
- ¼ Cup chopped cilantro
- Procedures :
In a small bowl, mix water with cornstarch, sugar, fish sauce, soy sauce and oyster sauce together, mix well and set a side.
Pre-heat a large wok or frying pan with high temperature.
When wok is hot, add oil and put the whole fish in with hot oil, pan fry fish till both sides golden brown , remove fried fish from wok, put it on a serving plate, and set a side.
Return to same wok, add garlic, yellow onion, carrot, and tomato, stirs well.
Add red pepper, star fruit and black pepper, stirs.
Pour prepared cornstard sauce over, stirs and cook till the sauce thicken.
Add green onion and cilantro, stirs and immediately pour sauce on top of fried fish.
Serve hot with rice.
