Rice macaroni with pork hock soup is one of Khmer Krom favorite breakfasts.
Rice macaroni is made from 100% rice flour. Authentic Khmer recipe cook with pork and snakehead fish filets *trey tok*.
When I was young, whenever I saw my great aunt or my mother soaked rice overnight it made me happy because it meant good eating coming. :)
Most villagers and some of my family members still make rice noodle and rice macaroni the old fashion way. To make rice flour, places a scoop of soaked rice with water in a ancient stone grinder, manually turns the handle in circle motion to grinded rice in to rice flour. When that process done, pour the liquid rice flour in a large piece of cloth, presses out water to get a chunk of rice dough. Roll by hand or press rice dough to any shapes of noodle before drops it in to boiling water.
Ancient Khmer name for rice macaroni soup with pork hock is *num kanh*. *Num* meaning cake in Khmer and *kanh* meaning grinded. Rice macaroni soup with pork hock is one of Khmer old recipes from Kampuchea Krom, which now knows as * South Vietnam.* Only those who live in South Vietnam familiar with this Khmer Krom dish. Most people from the North and Central Vietnam have never taste it before. Vietnamese loves this Khmer Krom recipe so much that they calls is * Banh’ Canh.* The younger generation Khmer Krom calls rice macaroni soup with pork hock in Khmer num banh kanh.
The store bought dried rice macaroni didn’t taste as good as homemade soup I used to eat at home, but it is the closest to authentic Cambodian food that I can get to you.
- Ingredients :
- 2 lbs Already cut pork hock, washed and drained
- 6 Cups water
- 1 Cup uncooked rice macaroni, soaked in warm water, drained
- 1 Yellow onion, sliced
- 2 Tablespoons fish sauce
- 1 Teaspoon salt
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 3 Stalks green onion, chopped
- 1 Tablespoon roasted onion
- Procedures :
Put pork hock and water in large soup pot, cook till pork hock tender (do not over cook.)
Add rice macaroni and yellow onion, stirs, cook till rice macaroni tender.
Seasoning witt fish sauce, salt, sugar and black pepper, stirs well.
Top with green onion and dried roast onion before serve.
Serve hot along with chili sauce and slice lime or lemon.
