Stir-fry pumpkin with shrimp.
Authentic Khmer Krom recipe, stir-fry pumpkin with shrimp is tasty and healthy.
Pumpkin is an ancient vegetable that have been in Cambodia many years.
Pumpkin not only tastes great it is also rich with potassium, vitamin A and beta-carotene. In the ancient time, the villager’s medicine men used to sun dried the pumpkin then turned it into medicine powder to treats headache, fever and other diseases. Today, the medical researchers has proven that pumpkin is indeed a natural medicine that can help fight cancer, also prevent hardening arteries which main causes for stroke and heart attack, because pumpkin contains high beta-carotene.
- Ingredients :
- 1 Tablespoon soy sauce
- 1 Tablespoon fish sauce
- ½ Tablespoon sugar
- 2 Tablespoons vegetable oil
- 1 Clove garlic, minced
- 1 Yellow onion, sliced
- ½ lb Shrimp, peeled and de-veined
- 2 lbs Pumpkin, peeled,seeded and cut into small cubes
- ½ Cup water
- 3 Stalks green onion, chhopped
- ¼ Teaspoon black pepper
- Procedures :
In a small bowl, mix soy sauce, fish sauce and sugar together, set a side.
Pre-heat a skillet or wok.
When skillet hot add oil, garlic, onion and pumpkin. Stirs well.
Add water, stirs and cover skillet with lid and cook till the pumpkin tender.
Add shrimp, stirs till shrimp turns darker pink color.
Seasoning with mix sauces, stirs well.
Add green onion and black pepper, stirs well.
Serve hot with rice.
