(Fried fish with spicy tomato sauce).
Khmer Krom loves seafood, most of us could eat seafood everyday and never get tired. There are plentiful of fish back home, and there are so many way to cook fish. This golden crispy fried fish top with spicy tomato sauce is delicious Khmer Krom country food.
- Ingredients :
- 1 lb Fillet codfish, catfish or any fish your choice. clean and pat dry with paper towel
- 5 Tablespoons cornstarch
- 1/4 Cup vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, diced
- 1 Stalk celery, chopped
- 2 Tomatoes, peeled off skin, diced
- 2 Tablespoon fish sauce
- 1 Teaspoon soy sauce
- 1 Tablespoon sugar
- 2 Chopped hot chili pepper,or to your taste(option)
- Dash of black pepper
- ¼ Cup of chopped green onion and cilantro
- Procedures :
Rubs cornstarch evenly on both sides of fish fillet, set a side.
Pre heat a skillet or wok with high temperature.
When skillet is hot, add oil and pan-fry fish fillet till it golden brown.
Remove fried fish from skillet, put it on a plate, and set a side.
Return to same skillet, add garlic, yellow onion, celery and tomato, stirs.
Seasoning with fish sauce, soy sauce, sugar, hot chili pepper and black pepper, stirs well till sauce thicken.
Pour tomato sauce over fried fish.
Top with chopped green onion and cilantro.
Serve hot with rice.
