(Chicken stir fry with mushroom.)
Mushroom is one of Khmer ancient vegetables that very popular in Khmer Krom cuisine. During the Khmer Empire, Oyster, Button and Shiitake mushroom was a prohibited food for common people. Back then, black fungus mushroom “mouse’s ear” or “wood’s ear” that grows on wood was the only kind mushroom common people ate. Mushroom not only taste very good but it also used to treat illness. Black fungus well known for lower cholesterol and blood pressure, Shiitake for control growth cancer tumor. Many also believed that mushroom can sharpen your mind and help boost memory.
Stir-fry chicken and mushroom is absolutely delicious Khmer Krom country food.
- Ingredients :
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced
- ½ lb Chicken breast, sliced thin
- 1 Tablespoon fish sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon sugar
- 2 Stalks celery, sliced
- 2 Stalks green onion, chopped
- ½ lb Button mushroom, cleaned and sliced
- ¼ Teaspoon black pepper
- Procedures :
Heat up a skillet or wok with high temperature.
When it hot add oil,garlic, onion and chicken, stirs and cook till meat tender.
Seasoning with fish sauce, soy sauce and sugar, stirs well.
Add celery, green onion and mushroom, stirs well.
Sprinkles with black pepper.
Serve hot with rice.
