Authentic Khmer Krom appetizer recipe is delicious and easy to prepare. Back home, we use fresh Dungeon crab but where I am living Dungeon crab is very expensive and sold frozen or cooked. I substitute with fresh Maryland Blue Crab, is a little difficult to eat than Dungeon Crab but still taste very good.
- Ingredients :
- 2 Fresh Dungeon crab or 6 fresh Maryland blue crab
- 3 Tablespoons sugar
- 1 Teaspoon salt
- ¼ Cup water
- 3 Tablespoons vegetable oil
- 6 Cloves garlic, minced
- ½ Teaspoon black pepper
- Procedures :
Scrubbed and cleaned crab before removed the top shell. Remove crab’s roe from top shell and body, and put it in a small bowl, set a side. Remove big claws then cut it body into half, set a side.
Mix sugar, salt and water with crab's roe, mix well and set it a side.
Heat up a skillet or wok with high temperature.
When skillet is hot, add oil, garlic, stirs, add crab, stirs till crab turns darker pink color.Add crab's roe sauce. stirs well, covered skillet with lid for several minutes to let sauce blend in.
Sprinkles with black pepper before serve.
Serve hot as appetizer or serve along with rice.
