Tomato is originated from South America. It believed that first batches of tomato made it way to South East Asia with the Spanish during Khmer Empire. The German called tomato “wolf peach” because the European women used to extracted the tomato plants for cosmetic purposed. Back then the” wolf eyes looked” was a very popular trend in Europe. The European women would dropped the juice from tomato plant in the eyes, to dilated their pupils for sexy looks. Today most people still believing that eating tomato leaves is poison. But in Kampuchea Krom we loves cooking not only with tomato, but with the tomato leaves as well. Tomato leaves taste like spinach and very tasty. We cook tomato leaves with salor kor ko (Khmer vegetables stew.
This delicious chicken with green tomato is authentic recipe from Khmer Krom in Khleang (Soc Trang). The original recipe called for sliced hot chili pepper, but I substitutes with red bell pepper.
- Ingredients :
- 1/3 Cup water
- 1 Tablespoon fish sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon oyster sauce
- 1 Tablespoon sugar
- 1 Tablespoon cornstarch
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- ½ lb Chicken breast, sliced thin
- 4 Stalks green onion, cut an inch length
- 2 Medium green tomato, sliced
- 2 Hot chili pepper, sliced or 1 red bell pepper, seeded and sliced
- ¼ Teaspoon black pepper
- Fresh
cilantro for garnish
- Procedures :
In a small bowl, mix water with fish sauce, soy sauce, oyster sauce, sugar and cornstarch together, set a side.
Heat up a skillet or wok with hight temperature.
When skillet hot add oil, garlic and chicken, stirs and cook till meat tender.
Add green onion, green tomato, and bell pepper, stirs.
Add prepared sauce, stirs well till sauce thicken.
Sprinkles with black pepper and garnish with cilantro leaves before serve.
Serve hot with rice.
