(Bitter melon soup with fish balls.)
Bitter melon with fish ball soup is delicious country food from Khmer Krom in Khleang(Soc Trang)province.
- Ingredients :
- FISH BALL:
- ½ lb. Grounded fish.(Frozen grounded fish sold at most Asian market.)
- 1 Stalk green onion. Minced.
- 1 Tablespoon fish sauce.
- ½ Tablespoon sugar.
- ¼ Teaspoon black pepper.
- SOUP:
- 4 Cups water.
- 2 Bitter melon Seeded and sliced thin.
- 1 Tablespoon creamy style pickle fish (pahok). (Option).
- 1 Tablespoon fish sauce.
- ½ Tablespoon sugar.
- 2 Tablespoons minced lemon grass.
- 1 Cloves garlic. Minced.
- 2 Tablespoons roasted rice powder.
- 1 Hot chili pepper. Minced.
- 1 Stalk green onion. Chopped.
- 1 Tablespoon cooking oil.
- Procedures :
Put grounded fish in a bowl with green onion, fish sauce, sugar and black pepper. Mix well.
Wet your hands with water to prevent sticking and roll fish mixture into small ball.
Continue making fish balls till done. Set a side.
Heat up a soup pot on medium high temperature. When it hot add cooking oil.
Sauté garlic, lemon grass and hot chili pepper for few seconds. Stirs well.
Pour water into the soup pot and cook till water boiled.
Drops fish balls and bitter melon into boiling water.
Seasoning with roasted rice powder, fish sauce, sugar and ”pahok”.
Top with chopped green onion before serve.
Serve hot with rice.
