( Chicken wings with bitter melon).
Stir-fry chicken wing with crisp bitter melon is delicious country recipe from Khmer Krom in Prek Reussey (Can Tho) province.
- Ingredients :
- 4 Cups water
- 1 Large Bitter melon, seeded and sliced
- ¼ Cup water
- 1 Tablespoon fish sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 5 Chicken wing, cut and discards the tip of wing
- 1 Large carrot, peeled and sliced thin
- 3 Stalks green onion, chopped
- Procedures :
Put 4 cups water in a soup pot and cook till water bubbling.
Add bitter melon in boiling water and cook for 2 minutes. Pour bitter melon into colander, set a side to drain. This process to reduce bitter taste from bitter melon.
In a small bowl, mix ¼ cup water with fish sauce, soy sauce, sugar and black pepper, mix well and set a side.
Heat up a skillet or wok on high temperature.
When it hot, add oil, garlic and chicken wing, stirs.
Seasoning with with prepared sauce, stirs well.
Covered skillet with lid and simmering till chicken wing tender.
Add carrot and bitter melon, stirs well.
Add greenn onion, stirs and serve.
Serve hot with rice.
