Broken rice with prepared shredded pork skin and grilled pork chop is delicious. It is one of the most popular Khmer Krom rice recipes.
Broken rice or rice bit are the imperfect shape of rice kernel that broke to less than three-fourth of the whole rice kernel. During Khmer Empire, the farmers used broken rice only for pet foods. The Khmer Krom tale told the story of a wicked step mother who made her husband’s beautiful daughter ate with the same rice that fed the chicken. The daughter only allowed to eat out of coconut shell that the stepmother dumped left over food on. One day, an old lady came to the door and asked for food. The stepmother cursed at the old lady and told her to go away. The daughter felt sorry for the hungry old lady, she wrapped her little dinner in banana leaf and ran after the old lady. The daughter gave the old lady her dinner and apology for that was all the food that she got. It turn out the old lady was a prince in disguised who rumbling through villagers to look for the kind woman to be his wife, and he found her.
Since then, *Bai Moan*in Khmer meaning rice for chicken became very popular, that most restaurants have broken rice on their menus.
The authentic Khmer Krom broken rice dish usually came with many type of meats on top, and usually with combination of shrimp, pork, beef, chicken, duck, fish, egg or whatever meat that you prefer with broken rice.
- Ingredients :
- 2 Cups un-cook Jasmine rice bits
- 2 Cups water
- 4 0z cooked shredded pork skin ( sold at frozen section at most Asian markets)
- ½ lb Lean pork meat
- 1 Clove garlic, minced
- ½ Tablespoon soy sauce
- Dash of black pepper
- 3 Tablespoons vegetable oil
- 4 Stalks green onion, chopped
- ½ Cup water
- 3 Tablespoons roasted rice powder
- 4 pieces pork chop
- 3 Cloves garlic, minced
- 2 Tablespoons soy sauce
- ½ Teaspoon sugar
- ¼ Teaspoon salt
- ¼ Teaspoon black pepper
- Procedures :
Cook broken rice with 2 cups water in a automatic rice cooker or on stove till rice tender. Use spatula to separated cooked rice, keep rice warm and set a side.
Rinsed cooked shredded pork skin with warm water several times, cut to bite side and set a side to drained.
Put lean pork meat, garlic, soy sauce and black pepper in a large bowl,mix well and set a side.
Heat up a skillet or wok.
When skillet is hot, add oil and chopped green onion, sauté till onion soften,
removed green onion oil and put it in a small bowl but save enough oil to fry marinated pork meat, set onion oil a side.
Returns skillet to the stove, put marinated pork meat in hot skillet, pan fry till meat brown, add ½ cup water and simmering till pork meat tender.
Removed pork meat from the stove and set a side for meat to cool down,
cut cooked meat to thin, small pieces, put in a large bowl, add shredded pork skin, roasted rice powder to cooked meat, mix well and set a side.
In a large bowl, marinated pork chops with 3 cloves garlic, soy sauce, sugar, salt and black pepper.
Cooked on grill with low temperature till pork chop tender and both sides golden, set a side.
TO SERVE:
Take some cooked broken rice places on a plate and spreads some onion oil on top rice. Put a piece of grilled pork chop and shredded pork on top the rice.
Serve hot a long with carrot and daikon relish and sweet fish sauce .
