(Sticky rice with mango).
Delicious sweet rice with fresh mango and coconut sauce is one of many wonderful recipes from Swayton( Tri Ton) Mott chrouk ( Chau Doc). Note: Authentic recipe used steamed sweet rice.
- Ingredients :
- 1 Can coconut milk
- ½ Cup sugar
- ¼ Teaspoon salt
- 2 Cups un-cook Jasmine sweet rice, rinsed and drained
- 1 Cup water
- 4 oz. Shredded fresh or frozen coconut meat
- 1 Riped mango, peeled, sliced and cut bite sizes
- Procedures :
Pour coconut milk in a small sauce pan, simmering till sauce thicken, add sugar and salt, stirs till sugar disolved. Removed from coconut sauce from hot stove and set it a side.
Cook sweet rice with 1 cup water in an automatic rice cooker till rice tender. Separate cooked rice with spatula, put cooked sweet rice in a large bowl, pour ½ amount prepared coconut sauce over sweet rice, stirs, add shredded coconut meat, stirs well and set it a side.
To serve: Put prepared sweet rice in a small bowl, pressed and packed down sweet rice with large spoon. Put a plate on top of sweet rice bowl and turn it up side down, now make an opening island on middle top of sweet rice and fills it with mango. Serve along with remaining ½ of coconut sauce.
Some people like to dip the coconut sauce with while they eat, other just pour everything together ( as seen in picture).
