(Coconut pound cake.)
This Khmer Krom coconut pound cake from Mott Chrouk (Chau Doc) province is moist and delicious. My family favorite cake to take to pagoda on religious holidays. Back home, many Khmer Krom do not have the oven,but we could bakes most foods on stovetop.

Pre-heat oven at 325 degrees.
Grease up cake pan or bread pan with vegetable oil (or sprays with Pam) and sprinkles 1 tablespoon All Purpose flour at the bottom of cake pan, when done set it a side.
In a mixing bowl, mix sugar and butter till it creamy, add egg (one at a time) with butter sugar, mix well.
Add baking powder, salt, vanilla and coconut milk, mix well, add flour and shredded coconut, mix well. Pour mixture in
greased cake pan or bread pan.
Bake in pre-heated oven for 1½ hour. Removed cake pan from oven, set it a side till cake cool off before take cake out.
Serve with tea or coffee.
