( Caramelized anchovies.)
Khmer Krom loves anchovies and so the rest of the world. Anchovies are tiny little silver color, salt water fish that only about 2 to 3 inches long. There are many recipes make with anchovies such as this delicious caramelized anchovies with black pepper. The finest and tasty Kampuchea Krom fish sauce are also made with anchovies. If you are looking for fish sauce, the lightest color of the fish sauces usually is the better quality. World famous Phu Quoc (Koh Tral island) fish sauce and many other fish sauce brands are amongst many great produces of Kampuchea Krom ( a part of Cambodia that now know as South Viet Nam since 6-4-1949).
- Ingredients :
- 1 Tablespoon water
- 1 Tablespoon sugar
- 1 Cup water
- ½ Cup fish sauce
- 2 Tablespoon sugar
- 2 Cloves garlic, minced
- 1 Package fresh frozen anchovies( find at most Asian markets),rinsed and drained
- 1 Teaspoon black pepper or to your taste
- Procedures :
First make caramelized sauce by put 1 tablespoon of water and 1 tablespoon of sugar in a pot or skillet that big enough to hold all ingredients. Cook and stir frequently till sugar turns dark brown color, immediately pour 1 cup water over caramelized sauce, stirs well.
Add fish sauce, sugar and garlic, stirs well.
Add anchovies and simmering till the water reduced.
Sprinkles with black pepper before serve.
Serve hot with rice.
