Bean thread noodle with chicken and bamboo shoot soup is one of famous noodle soups from Khmer Krom in *Mee psar* (My Tho) province. *Mee* is meaning noodle in Khmer, *Psar* is meaning market in Khmer. *Mee Psar* (My Tho) is well known for produces the best Khmer noodle. Note: Authentic Khmer Krom bean thread noodle soup cooked with duck.
- Ingredients :
- 1 package bean thread noodle
- 5 Cups water
- 1 Cornish hen or ½ chicken
- 1 Teaspoon salt
- 6 Cups water
- 1 Small canned sliced bamboo shoot, or fresh bamboo shoot,(sliced)
- 1 Yellow onion, sliced
- 1 Tablespoon vegetable oil
- 3 Cloves garlic, minced
- 2 Tablespoons
- 1 Tablespoon sugar
- ¼ Teaspoon white pepper
- 3 Stalks green onion, chopped
- Black pepper
- Procedures :
In a large bowl, soaked bean thread noodle with hot water until it soften, drained,cut noodle in half and set it a side.
Put 5 cups water in a pot, cook till water bubbling, add bean thread noodle to boiling water, stirs, cook for 5 minutes, pour cooked noodle in to a colander and set a side.
Put chicken, salt and 6 cups water in a large soup pot, cook till chicken meat tender. Removed cooked chicken from soup pot, put in a large plate and set a side.
Add bamboo shoot and yellow onion in soup stock, stirs.
While bamboo shoot cook, cut chicken to chunks bite sizes, if prefer boneless, removed bones and shredded chicken meat,set a side.
Heat up a small sauce pan.
When sauce pan is hot, add oil and garlic, saute' garlic till brown ( not burn), pour garlic oil in soup pot, stirs.
Seasoning soup with fish sauce, salt, sugar and white pepper.
Put some cooked bean threat noodle in a bowl, add some chicken meat and chopped green onion. Pour hot soup stock with bamboo shoot on top and sprinkles with black pepper. Serve immediately.
