( Grilled eggplant and scallop).
Succulent grilled scallop, eggplant and scallion oil is delicious.
- Ingredients :
- 1 lb Large scallop
- 2 Cloves garlic, minced
- 1 Tablespoon soy sauce
- ¼ Teaspoon salt
- Dash of black pepper
- 2 Tablespoons vegetable oil
- 3 Stalks green onion, chopped
- 2 Asian egg plant, cut an inch thick
- 1 Vidalia sweet onion, sliced ½ inch thick
- 1 Green bell pepper, sliced
- 1 Yellow or red bell pepper, sliced thick
- Procedures :
In a large bowl, marinated scallop with garlic, soy sauce, salt and black pepper, set a side.
Pre-heat a small sauce pan, add oil and green onion, saute' green onion till it soften, remove from heat, set a side.
Pre-heat grill on medium temperature, put eggplant on hot grill, cook for 5 minutes on each side or till tender.
Grilled scallop and onion till both sides golden brown.
Grilled bell peppers last, it only take few minutes to cook .
When done, arranges grilled scallop and vegetables on a serving plate, pour onion oil on top and serve immediately.
Serve with rice and sweet fish sauce dipping.
