( Vegetables egg fried rice).
Egg fried rice with bean sprouts, peas and carrot is very fulfilling and tasty.
Left over rice is idea for making fried rice. Left over rice can keep in the freezer up to a month, and it is excellent to use with many delicious Khmer Krom fried rice recipes.
- Ingredients :
- 2 Cups cooked rice.
- 4 Cups bean sprout. Washed and drained.
- ½ Cups frozen peas and carrots mix. Defrosted.
- 2 Cloves garlic. Minced.
- 3 Stalks green onion. Chopped.
- 2 Tablespoons cooking oil.
- 1 Tablespoon soy sauce.
- 1 Teaspoon salt.
- ¼ Teaspoon black pepper.
- 2 Eggs. Slightly beaten.
- Procedures :
Heat up non-stick skillet or wok with high temperature, add 1 tablespoon cooking oil.
Pour and spreads the eggs mix over the hot pan to form like a round omelet shape.
Remove the eggs when it cooked, place it on a plate, fold and cut it to thin strips. Set a side.
Add the remaining cooking oil to the frying pan, then garlic, frozen veggies and rice. Stirs till vegetables cooked.
Seasoning with soy sauce, salt and black pepper. Stirs well.
Add cooked eggs, bean sprouts and green onions. Stirs.
Serve hot.
