( Ham fried rice).
According to my father, his great grandfather didn’t allowed any his guests eat fried rice at his house. Because back then, fried rice were made only from left over rice, and my ancestors believed that very disrespectful to serve left over rice to guests. Today, in *Kampuchea Krom* (South Vietnam) any meal with fried rice is considering fancy or gourmet, and fried rice also serves on special occasions such as wedding banquet. Most restaurants have varieties of fried rice on the menu.
This ham fried rice is delicious and very easy to make, a perfect dish for any occasions.
- Ingredients :
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, chopped
- 1 Cup chopped cooked ham
- 2 Cups frozen mix vegetables(carrot,peas, green bean and corn), defrosted and drained
- 1 Tablespoon soy sauce
- ½ Teaspoon fish sauce
- Dash black pepper
- 4 cups cooked Jasmine rice
- 2 Eggs, beaten
- Procedures :
Heat up a non-stick wok or frying pan with high temperature.
When wok is hot, add oil, garlic, onion and ham, stirs well, and add mix vegetables, stirs.
Seasoning with soy sauce, fish sauce, black pepper, stirs well.
Add rice, stirs till rice hot and fluffy, add egg, stirs well till egg cooked.
Serve hot.
