( Tofu stuffed with shrimp ).
Crispy tofu stuffed with grounded shrimp savory in tomato sauce is yummy and healthy Khmer dish.
- Ingredients :
- ˝ lb shrimp, shelled, de-veins and grounded
- 1 Clove garlic, minced
- 1 Teaspoon
- 1 Teaspoon cornstarch
- Dash black pepper
- 2 Stalks green onion, removed longest stems,soaked it in hot water and drained
- 2 Firmed tofu
- 3 Tablespoons cooking oil
- 2 Medium tomato, diced
- ˝ Teaspoon
- ˝ Teaspoon soy sauce
- 2 Stalks green onion, chopped
- Procedures :
In a small bowl, mix grounded shrimp with garlic, fish sauce, black pepper and cornstarch together, set a side.
Using sharp knife cut open a pocket of each tofu.
Stuffed prepared grounded shrimp in tofu’s pocket, tight tofu with soaked green onion stems, set a side.
Pre heat a skillet or wok with high temperature.
When skillet is hot, add 2 tablespoon oil, careful put stuffed tofu in, cook till both sides tofu crispy and golden brown.
Removed fried tofu from skillet, put it on a serving plate, and set a side.
Return to the same skillet, add remaininng tablespoon oil and tomato, stirs.
Seasoning with fish sauce, soy sauce and sugar, stirs till sauce thicken.
Add chopped green onion, stirs and pour sauce over fried tofu.
Serve hot with rice.
