( Khmer meat pancake.)
In some Kampuchea Krom provinces *num ka leng* Khmer meat pancake also knowns as *num banh xeo*.
Authentic Khmer recipe for this meat pancake used uncooked rice and not flour. Many Khmer Krom villagers still using ancient technique to make flour with stone grinder. I learned how to make Khmer meat cake the old tradition Khmer way from the best cook in the whole village, my paternal great aunt. Today, you can buy already made rice flour for *num ka leng*, but to me nothing compare to homemade flour.
Golden crispy rice flour cake flavor with coconut and turmeric stuffed with meat is delicious. According to my elder, you can stuffs *num banh xeo* with either grounded pork, grounded chicken, grounded duck, grounded shrimp or combination of both meat and shrimp.
- Ingredients :
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced thin
- 1 lb grounded pork
- 1 lb shrimp, peeled, de-veined and grounded
- 2 Tablespoons fish sauce
- ½ Tablespoon sugar
- ¼ Teaspoon black pepper
- 1 Package 12 oz prepared flour for Banh Xeo
- 2 Cups fresh coconut milk or 1 large canned Chau Doc coconut milk
- 2 Cups water
- 5 Stalks green onions, chopped
- ½ Tablespoon sugar
- ¼ Teaspoon salt
- 1-2 lbs bean sprout, washed and rinsed
- 1 Cup cooking oil for fry cake
- Procedures :
Pre-heat a large skillet or wok with high temperature.
When skillet is hot, add 2 tablespoons oil, garlic, yellow onion and grounded meat, stirs well.
When meat cooked, add grounded shrimp, stirs well till shrimp turns darker color pink.
Seasoning with fish sauce, sugar and black pepper, stirs well, turn off stove, and set it a side.
In a large bowl, mix *banh xeo* flour with turmeric powder, sugar, salt, water, coconut milk and green onions, mix wells and set it a side.
Pour 1 cup vegetable oil in to a small bowl, set a side.
It's best to use non-stick skillet or wok to cook this Khmer meat cakes.
Pre heat a non-stick skillet or wok with medium high temperature.
When wok is hot, add a teaspoon oil, make sure oil coast evenly.
Pour ½ cup prepared flour batter, spreads over hot skillet to form a flat pancake about size of a dinner plate.
Add some cooked meat, put it at the middle of the cake and take some bean sprouts put over cooked meat.
Cover wok with lid for few minutes or till the bottom cake turns golden brown.
Flips half side of meat cake over other side to form a half moon shape cake,
removed that meat cake from heat, and continue to make the rest of Khmer meat cake.
Serve hot.
Khmer people like to wrap a piece of cake in roman lettuce with slices cucumber and fresh herbs; mint. mint,cilantro, , sweet basil leaves,and dips with sweet fish sauce. It's absolutely delicous !
