( Khmer shrimp scampi).
Shrimp scampi is absolutely delicious Khmer Krom country food and very easy to make. If you prefer peeled shrimp for this recipe buy jumbo or large shrimp. If you prefer to cook shrimp with shells use small shrimp.
- Ingredients :
- 2 Tablespoons vegetable oil
- 3 Cloves garlic, minced
- 1 lb Small shrimp, removed heads and tails but leave shells on
- 2 Tablespoons sugar
- ¼ Teaspoon salt
- 3 Tablespoons fish sauce
- ¼ Teaspoon black pepper
- Procedures :
Heat up a skillet or wok with high temperature.
When it hot, add oil, garlic and shrimp.
Stirs well till shrimp turns darker pink color .
Seasoning with sugar, salt and fish sauce, stirs well.
Cook till sauce caramelized.
Tprinkles black pepper on top.
Serve hot with rice or plain rice soup.
