Num pa-chok nhoam sach chrouk.
(Khmer Krom noodle salad with shredded pork).
Rice vermicelli noodle with shredded pork and vegetable savory with coconut and sweet fish sauce is very yummy. Num pa-chok nhoam is great for buffet party. When is time to serve, set every thing out as order; vegetables, noodle, meat, dried shrimp, coconut sauce, sweet fish sauce and crushed roasted peanut, and let the guests help themselves.
If don't eat pork could substitute with shrimp or chicken which included in this recipe.
- Ingredients :
- 8 Cups water
- 1 Package large vermicelli rice noodles, or
rice noodles
- ½ lb bean sprouts, washed and drained
- 1 Large cucumber, peeled and julienne
- A handful of chopped mix herbs(of mint, cilantro)
- 4 oz Large dried shrimp, soaked in hot water, rinsed and drained (option)
- 1 Package(8 oz) frozen cooked shredded pork skin, ( frozen section at most Asian markets)
- 2 Cloves garlic, minced
- 1 Tablespoon soy sauce
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 1 lb Lean pork meat
- 2 Tablespoons vegetable oil
- 1 Cup water
- 4 Tablespoons roasted rice powder
- ½ Cup unsalted roasted peanut, crushed
- Procedures :
Put 8 cups water in a large pot, cook till water bubbling, add noodle to boiling water, continue to cook till noodle tender. Pour cooked noodle in a colander, rinses under cold water and set a side to drain.
In a large bowl, mix bean sprouts with cucumber and mix herbs together, and set it a side.
Using mortal and pestles pounded dried shrimp to very fine, powder like, when done set it a side.
Soaked pork skin in warm water, rinsed, repeats a couple times, squeezes out water, put it in a colander to drained. Cut 3 inches in length and set it a side.
In a small bowl, mix garlic, soy sauce, salt and black pepper together, rubs sauce on pork meat and set a side.
Heat up a skillet or wok. When skillet is hot, add vegetabl oil and marinated pork meat. Brown pork meat till both sides golden brown, then add 1 cup water, simmering till meat tender. Removed cooked pork meat and put it in a plate to cool off.
When meat cool to touch, slices meat thin and julienne, and put it in large bowl. Add shredded pork skin and roasted rice powder, mix well.
To serve:
Put some mix vegetables on a plate, add some cooked noodle on top.
Top noodles with pork meat(or chicken or shrimp recipe below), and sprinkles with a little dried shrimp powder(option). Add some coconut sauce on top,
and some sweet fish sauce.
Top with some roasted peanut (option).
With Shrimp or Chicken meat.
1 lb grounded chicken or grouded turkey, or 1 lb shrimps, peeled, de-veined and chopped
2 Tablespoons vegetable oil
2 Gloves garlic, minced
1 Small yellow onion, chopped
½ Teaspoon salt
¼ Teaspoon black pepper
Heat up a skillet or wok, when it hot, add oil, sauté garlic, onion and meat together, stirs till meat tender. Seasoning with salt.
Serve as same above recipe.
